FINGAL FERGUSON GUBEEN SMOKEHOUSE


Fingal & Giana Ferguson of Gubeen Smokehouse/Farmhouse in Schull West Cork are probably the best know artisans in this country Giana's cheese & Fingals Charcuterie are the finest in Europe according to Ross Lewis of Chapter One in Dublin this is borne out my the fact that they have too many awards to even begin to mention. At Springfort Hall we use Gubeen cheese & cured meats everywhere on the breakfast menu in sandwiches in the shop to main course dishes in the restaurant and the cheese board. Chorizo,Salami, Venison Salami all amazing products.

DESMOND LYSAGHTS FARM HAZELWOOD


We use Desmond Lysaghts Free Range Hen & Duck Eggs as well as his lamb in the kitchens at Springfort Hall Country House. Desmonds farm is in Hazelwood 1 mile from the hotel his eggs are also stocked at the springfort shop & Desmond is a regular at Mallow Farmers market on Friday mornings but you have to be early he always sells out. Desmond has supplied the eggs for the main course at taste fest cork.



Stonewell cider has just come to the market produced by Geraldine & Daniel Emmerson, Novahal Brewing, Kinsale, Co Cork it is a medium dry cider made using traditional methods select regional methods and natural yeasts no artificial colours or flavours a truly wonderful new product hand crafted with care by a small team of dedicated artisans at Springfort hall we now stock Stonewell in the bar and use it to make the cider jelly that accompanies our pork belly & Black Pudding dish.



Kitty Colchesters Second Nature Oils is a Phenomenal success story within months of returning from Ethiopia to the family farm in Urlingford co Kilkenny Kitty had won numerous awards for her organic cold pressed rapeseed oil which up until then had been a by product of the rape production as feed for the organic pigs on the Colchesters farm. Kitty received the ultimate honour when Ross Lewis used her oil on the salmon starter at the queens banquet in may 2011 & having eaten a similar dish in Chapters One in February 2011 i can really say lucky queen. The incredible nutty flavour the oil imparts is far superior to olive oil so much so that we now serve a version of that salmon dish in the restaurant in the hotel & sell the oil in the shop.


Ardsallagh goats cheese has been run by the Murphy family for over 30 years. Jane Murphy`s Passion for goats & there milk began as a necessity when her children suffered from eczema & a friend informed her of the benefits of using goats milk products over cows milk. Jane and Gerard moved the Ardsallagh farm from Youghal and relocated to Carrigtwohill, County Cork in 1996. Having started with a handful of goats, the herd has now grown to several hundred. The goats are milked twice a day and the milk used to make hard cheese, soft cheese, yogurt and bottled milk. This small family-run business has grown steadily and The whole family contribute toward the smooth running of the farm and dairy. we use Ardsallagh soft goats curd cheese on the starter section at Springfort Hall & will soon be selling it in our shop
